The couple eventually settled in Montreal, and in 2014 took their first trip to a cacao plantation — Alto El Sol, in northern Peru — where the passion and pride of the farmers they met left a lasting impression. Researching cacao further, they discovered bean-to-bar chocolate made by small artisan makers, and were struck by how dramatically flavor could vary from one bar to the next. Elfi and Maxime visit the farms themselves whenever possible, evaluate the beans firsthand, and build the kind of direct relationships that support both fair post-harvest practices and the preservation of native, heirloom Peruvian cacao varieties.
