Finca Las Garmas, run by husband and wife team Maximiliano and Esperanza Garmas, produces several varieties of coffee in El Huabo, Cajamarca, Peru, including Parainema, which impressed us with its unique attributes. Despite being a hybrid variety, Parainema has yielded exceptional lots in its home country of Honduras and elsewhere. Las Garmas’ rendition is delicate, dynamic, complex, silky, and tart. While challenging to perfect on espresso, it makes for an entrancing filter coffee. The herbal qualities remind us of stepping into a very expensive oils and aromatics boutique, while the fruits are piquant, tropical, and refreshing.
