The Great Pumpkin Pancake – Gingerbread Spice in Every Bite (GF, V)
Consider your weekend plans sorted: pumpkin pancakes and a viewing of the 1966 classic It’s the Great Pumpkin, Charlie Brown. These Gingerbread Pumpkin Oat Pancakes taste like fall, with pumpkin, oats and a warm hit of Diaspora Spice Co. Gingerbread Spice. Everything goes into the blender at once, so there’s only one container to wash. The oats get blended right into the batter, which makes the pancakes hearty and naturally sweet.
Makes about 12 small pancakes
Ingredients
- 2 cups (215 g) rolled oats (gluten-free if needed)
- 1 cup (240 ml) milk of choice
- ½ cup (120 ml) pumpkin purée
- 1 medium ripe banana (about 100 g), peeled
- 2 large eggs, or your favorite egg substitute
- 2 tablespoons (30 ml) maple syrup (optional)
- 1 tablespoon baking powder
- ½ teaspoon Diaspora Spice Co. Gingerbread Spice
- ½ teaspoon kosher salt
How to make them
- Blend the batter. Add the wet ingredients to your blender first (milk, pumpkin, banana, eggs and maple syrup), then the oats, baking powder, spice and salt. Blend on low, then turn it up to high and run for about a minute, until smooth.
- Let it rest. Set the batter aside for 15 to 20 minutes. This gives the oats time to soak up liquid, so the batter thickens and the pancakes hold together. If it gets too thick to pour, stir in a splash of milk.
- Cook. Heat a lightly greased griddle or skillet over medium heat. Pour about ¼ cup (60 ml) of batter for each pancake. Cook 2 to 3 minutes, until bubbles form on top, then flip and cook another 2 to 3 minutes, until both sides are golden and the center is set.
Tips
- For a stronger gingerbread flavor, increase the spice to ¾ or 1 teaspoon.
- Serve with maple syrup, a spoonful of yogurt, or stewed or sliced pears and apples.
