Sambal goreng - or fried shallots, garlic, and chilies - is a chameleon ingredient that can be used as a flavorful base for cooking, a finishing on literally any dish, or a snack enjoyed straight out of the jar. It’s dry, lightweight, and delicious with everything - tacos, burgers, ramen, eggs, popcorn, stir-fry, pasta - the list goes on! This is our personal take on the new pantry essential.  

This spicy fried chili topping comes from LA based Balinese street food pop-up, Bungkus Bagus. Though sambal is very common throughout Indonesia, sambal goreng is unique to Bali because it’s deep-fried and dry. Sisters Celene and Tara Carraras are chopping and frying Thai chilies, shallots, and garlic, all completely by hand every week. It takes 50lbs of shallots, 5lbs of garlic, 6lbs of thai chilies, and 2 people 10 hours each to make 100 jars of Sambal Goreng!

Ingredients: shallots, garlic, bird’s eye chili, salt, vegetable oil. Shelf life: store in a cool, dry place for up to six months.
