More About the Maker: Bixby Chocolate was founded in 2011 in Rockland, Maine, by Kate McAleer and her mother, Donna, and is named for Kate’s great-great-grandparents. Kate was 23 and hand-wrapped the first Bixby Bars, which are still a top seller. She later trained in bean-to-bar chocolate making at the Institute of Culinary Education and the Ecole Chocolat Professional School of Chocolate Arts. Today the company makes its chocolate in a former ice factory on Rockland’s working waterfront, roasting, winnowing, and milling the beans in house.
The cacao is certified organic and comes through Uncommon Cacao, a specialty trader working with smallholder producers in more than 15 countries. Bar origins include a Haitian dark bar made with beans from a collective of small-scale growers, which won a 2023 sofi Gold Award, and a Guatemalan espresso bar. The sugar comes from the Native Green Cane Project, certified organic cane in Brazil that is harvested green rather than burned. Bixby also works with Maine producers: a vegan oat-milk bar made with Maine Grains, and a bourbon bar made with Maine’s only certified organic distillery. Its white chocolate Crème Brûlée bar has won two International Chocolate Awards.
