If you only own one small knife, make it a paring knife. It’s smaller and shorter than a chef’s knife, so it’s perfect for chopping fruit and small vegetables like mushrooms, and it can stand in for a peeler on apples headed for a pie. This set of four has a smooth 3.75" stainless steel blade for precise, clean cuts. The handles are hornbeam in four colors, varnished to protect against moisture and dirt, so they’re durable and long-lasting.

Made in France

More About the Maker: Opinel was founded in 1890 by Joseph Opinel, an 18-year-old from the Savoie region of France, who made the first of his now-famous folding knives in his family’s forge. Within seven years he had developed twelve sizes, numbered 01 to 12, and in 1909 he adopted the Crowned Hand as the brand’s emblem, still stamped on every blade. In 1955 his son Marcel invented the Virobloc, a rotating ring that locks the blade open, and the design has barely changed since. Four generations of the Opinel family have run the company, which is based in Chambéry, in Savoie.

Opinel blades are cut or forged from European steel, either carbon or stainless, heat-treated for hardness, and hand-sharpened. The handles are shaped in house, mainly from beech, with about 95% of the wood coming from France. The beech and hornbeam come from PEFC-certified forests or controlled sources, and the company adopted PEFC certification in 2024. Wood chips from making the handles heat the factory, which the brand says saves about 200,000 liters of fuel a year. The knife has been called one of the 100 best-designed objects in the world by the V&A Museum, was chosen for the Phaidon Design Classics collection, and has been a part of French culture for well over a century.
