This is a Datil Pepper twist on a classic vinegar based hot sauce: the essence of the Datil Pepper's naturally sweet heat and signature Slow Burn. Recommend a dab (or a few!) on simple foods like veggies, meats, salads (instead of or along side dressing), an omelette/scramble, rice bowls, or tacos. We also recommend using Zab's Original as a "simmer sauce", adding a little back end heat when cooked into pasta sauces, soups, or anything that you want to give a bit of lingering burn. And finally, swirl a few dabs into your favorite dressing or aioli for an added kick.

Enjoy the Slow Burn: Zab’s hot sauces are made to celebrate the one-of-a-kind history and heat of the rare Datil Pepper. Despite mysterious origins, Datil Peppers have been grown for 200+ years in St. Augustine, Florida, where they are beloved for their unique "Slow Burn" and naturally sweet heat.

A new (but old) ingredient you most likely didn’t know you were missing. Despite mysterious origins, it has been a culinary staple and centerpiece of old Florida cuisine for 200+ years. We suspect the datil originated in the caribbean, and was brought to Florida in the late 1700’s/early 1800’s, where it became a local treasure, and evolved over time into the unique pepper it is today. Zab's datil peppers are grown with care on a small  farm just outside St. Augustine.

Datil peppers are listed under the Slow Food Foundation’s Ark of Taste - a database of heirloom and artisanal foods connected to a particular place or heritage that are at risk of disappearing. Zab's mission is to support producers and share our love for these special peppers.
